If you like Salvatore's series you may want to check out Steven R. Donaldson's Thomas Covenant series of books and Clive Barker's three pseudo-fantasy novels: The Great and Secret Show, Weaveworld, and Imajica.
Clive barker has other Dark-Fantasy novels as well.

Another great series was the original Dragonlance by Weiss and Hickman, that's what got me hooked on AD&D back in the 80s.
